Gâtinais Saffron
Crimson-coloured saffron delicately brings out the flavours of a dish, and the history of this noble spice has long been linked to the history of Loiret. Its cultivation prospered especially in Gâtinais, creating a fruitful local trade. Brought back into the imelight in recent years by an active friary, saffron – a true local tradition – has been honoured by a quality charter which ensures its culinary promotion.
